Pineapple Chicken Fajitas

How to make super DELICIOUS easy pineapple chicken fajitas – ready in 30 minutes!

Pineapple Chicken Fajitas Cook Time: 20 minutes Servings: 6


  • 2 Tbsp. olive oil
  • 3 tsp. chili powder
  • 2 tsp. ground cumin
  • 1 tsp. garlic powder
  • Salt & pepper
  • 12 oz. chicken tenderloins, halved lengthwise
  • 1 sweet onion
  • 1 red pepper
  • 1 green pepper
  • 1 small jalapeno pepper
  • 2 limes 2 cans (8 ounces each) unsweetened pineapple tidbits, drained
  • 2 Tbsp. honey
  • 12 corn tortillas (6 inches), warmed
  • Optional toppings: Pico de gallo, sour cream, shredded Mexican cheese blend and sliced avocado , lime wedges.

What You’ll Need : Large bowl, baking dish

Staples: Olive oil , chili powder , cumin , garlic powder , salt & pepper , honey

Prep : Preheat oven to 425°

  • Cut peppers in half an slice in ½ inch strips.
  • Cut onion in half and slice.
  • Wearing gloves, slice jalapeno in half and remove the seeds, then thinly slice. Keep some seeds if you like it spicy!

Prepare :

  • In a large bowl, mix first 5 ingredients; stir in chicken.
  • Add onion, peppers, pineapple, honey and limejuice; toss to combine.
  • Cooking the Chicken & Veggies :
  • Spread evenly on a lined baking sheet sprayed with cooking spray.
  • Bake in the oven 10 minutes Remove pans from oven; preheat broiler. Broil chicken mixture, 3-4 in. from heat until vegetables are lightly browned and chicken is no longer pink, 3-5 minutes.

Warming the Tortillas:

  • Wrap tortillas in aluminum foil and place in a 350° preheated oven for 15- 20 minutes.

Plate Your Dish :

  • Divide tortillas between plates.
  • Top with chicken mixture .
  • Serve with toppings and lime wedges as desired.
